I've been experimenting with a few different recipes (experimenting is delicious) with having vegetables in cake... I can almost hear you gasp, how could you ruin a perfectly good cake with vegetables. Well this one is AMAZING!!! and the best part is you can't even taste the vegetables. I know this because I have fed it to my nephews (who would never eat any of my cooking ever again if they knew I hid vegetables in their cake) and my friend who absolutely hates even the thought of pumpkin.
so this is the first version of what I call cheesecake slice, mainly because if I tell people it has pumpkin in it they won't try it :P
I forgot to take a picture of the second batch, the second batch I had a lot more evenly spread of the cheesecake topping. I like the first one because you got tangy bites of cheesecake with each bite but everyone else likes the second one so they win :P
Would you eat cake if you knew there were vegetables hidden in them? Do you hide vegetables in cakes?
