Tomato paste

I was going to make some more sun dried tomatoes but then I had a great idea. Why not make tomato paste instead. I had seeded most of my tomatoes ready for them to go in the oven. I did add a few more tomatoes but didn't seed them.

I cooked them on the stove and then strained all then through a fine sieve to get the seeds and skins separate from the tomatoey goodness. 

 I added some herbs and cooked it on the stove for a little while before transferring it a deep pan 

to the oven and let it cook down for about 2 hours at 140 degrees and I ended up with lovely thick tomatoey goodness that is tomato paste.

I've frozen it to use for lasagna at a later time :)

So many tomatoes

These are the unripe tomatoes that will take a day or so to ripen up and I will be adding to these over the next few days

and then these are the ripe tomatoes

so what do you do with almost 3 kgs of tomatoes while waiting for a food mill to arrive in the mail? you cook them anyway :D

Little orange and yellow flowers

I'm loving these cute little flowers... I can't remember what kind they are but as soon as they started flowering I was very surprised and how cute the flowers were

so far they've come out in orange and yellow

Present for Dad

when thinking about a present for hubby for his birthday, and what better gift than a home made one from your daughter..

so I bought a frame... this one is like a shadow box frame, I just liked the look of it honestly..

little miss did a drawing (took almost half an hour which is impressive from a one year old)

then I added the two together

I came across this cool cookie monster headband that you can colour in so I printed 2 in 2 different sizes for little miss to colour in

one turned into a bookmark

and one a headband

and we made some wrapping paper

Dad loved it :D and little miss loved all that colouring in....

veggie soup

what's better for tonsillitis then soup? and I made some beautiful veggie soup :)

I chucked in pumpkin, zucchini, cauliflower, potato, onion, tomatoes and broccoli in a pot with veggie stock and some herbs because well herbs make everything good :) everything cooked until it was nice and soft and then blitzed up

homemade soup makes everything better :)

Gone too soon

This week has been a tremendously difficult week, with the sudden passing of a great friend and colleague.. the world won't be as bright with him gone

sorry I've been MIA we have had tonsillitis mayhem over the past few weeks.. first little miss caught tonsillitis... and then a week and a day later I caught tonsillitis...

and I just have to say what a world of pain tonsillitis brings with it, I can't believe just how much it has knocked me around.  I finally feel like I'm coming out the other side now.. but boy does tonsillitis hurt...

ice cream, jelly and custard have been staples in our house over the past few weeks

so there will be a few posts now to catch up on all that I haven't had time to post

Seed saving

If you've seen my post on sun dried tomatoes, then you will have seen just how many seeds I saved from all those tomatoes..  and drying seeds takes time.. especially when there are heaps like the tommy toes..

normally I would dry them in a small glass dish, finding that they dry nicely and make it easy to collect once dry.  I have used paper towel in the past and then had a hard time pulling each and every seed that had dried to the paper towel off... I vowed never to do that again

the problem this time being that there were so many seeds that there was no way they would dry in the glass dish, well expect for the green zebra because there weren't that many.. so this time I decided to use some plastic container lids to dry the seeds on

and they dried out nicely after a few days.. note to self for next time I washed all the seeds together all at once so it meant that I didn't give the larger portion of seeds a real good wash.. so next time I'll make sure I wash them in smaller batches

Chicken noodle casserole

We had some chicken to use up and I thought why not make something like a casserole.. the temperature has dropped about 10 degrees over the past few days so something warm is definitely in order...

and following suit like many children little miss is being a bit more challenging with eating veggies, so I've been hiding lots of veggies in her food and today there are tons of veggies hidden..

I found this cute little stir fry box of veggies at my local IGA... and there was a little stalk of broccoli and cauliflower which I thought would be a nice touch of veggies to the casserole

nothing fancy but chicken noodle soup

added a little cream and mixed it altogether

the veggies were all chopped up small and cooked for about an hour

and then I did something that I have never done before but saw in a recipe video... I put raw pasta into the chicken casserole and left it to cook..

lots of veggies and it will be interesting to see if little miss will eat it (I did put the fettuccine in for her because noodles are her favourite ;) hehe)

Rainbow sundried tomatoes

So what do you do if you have heaps of ripe tomatoes and can't use them all before they spoil? sun dried tomatoes (well oven dried tomatoes) :D

and what better way to make a rainbow than with different coloured tomatoes

I only had my one green zebra, but had 7 wapsipinicon peach tomatoes so that was a good start. Everything got washed and cut in half.  Then I removed the seeds, and I have to say it took a little while but once I got the hang of it I could get the seeds out quickly.

All laid out on the baking tray ready to go

only 3 tigerellas, but again better than nothing

and then a bucket load of tommy toes :D

in a jug I put some olive oil

Added some Italian herbs and gave it a mix.  I then very lightly drizzled all the tomatoes with the oil and sprinkled some salt over the top

I only managed to get a small amount of seeds from the green zebra :D but I'm so glad that I did get some.  I was so worried that I wouldn't get any at all

I got a jar from IKEA :D it cost $3 and it was huge.  I gave it a good wash and let it dry

this is what they looked like after an hour and a half

and then after 2 and a half hours the tommy toes were definitely ready to come out and some of the small tomatoes were ready too

so I put the bigger ones in for another 20 minutes

and then they were ready :D so I let them cool a little

put the let over oil in the jar

and added the tomatoes

I then added a little extra oil to make sure the tomatoes were covered

and sealed the jar

Yum!!!! I can't wait to eat them (well other than the taste testers once they were done hehe)
